Very light European roasts can need weeks after roasting before they really open up, and with a normal bag you're guessing, so a lot of the time you find the sweet spot right as the bag runs out. I got tired of that, so I rest each coffee, taste it as it goes and seal it on the day it's best. The vials below were sealed anywhere from 28 to 90 days.
How to use them
Pick a vial
Each one is a single 15g dose, and there are only a few of each coffee.
Freeze it or brew it
Vials ship at room temperature, so put them in the freezer when they arrive, or brew one right away.
Grind it frozen
There's no need to thaw it. Grind straight from the freezer and brew the way you normally would.
