1. The Curation: We spend the final weeks of each month sourcing and evaluating coffees to select the single lot for the upcoming Ledger.

3. Roasting & Shipping: We work with our European partners to have the coffee roasted to order. All shipments are dispatched from our lab during the first full week of the month.
