In the highlands of Guji, at 2,200 meters of altitude, Tesfaye Bekele grows a coffee that carries the soul of Ethiopia within it. Founder of the Suke Quto farm, he is one of the emblematic figures of the Ethiopian coffee sector: agronomist, visionary and deeply committed to regenerating his land. Here the Kurume variety is processed as a Honey: the depulped cherry dries slowly with its mucilage, giving the coffee an enveloping sweetness and a rare aromatic complexity. In the cup, a brown-sugar sweetness opens onto a luminous acidity with hints of pineapple, before a persistent black tea finish.
