Cafelino is a family business based in Boquete, in the mountains of Chiriquí. Specialising in sustainable specialty coffee, it combines tradition, innovation and respect for nature to offer an exceptional coffee. At the heart of the estate is Finca Santa Elena, perched between 1,250 and 1,530 metres above sea level. Thanks to its unique volcanic terroir and careful production methods, Santa Elena produces coffees renowned for their rich aroma and exceptional quality. This magnificent Geisha is elevated by the exclusive Pinnacle process, a Hybrid method of absolute precision. The cherries, harvested at full ripeness, undergo a double fermentation: a first 24-hour anaerobic phase as whole cherries at room temperature, followed, after depulping, by a 24-hour aerobic phase in an open tank to work the mucilage. Fully washed, the beans then benefit from a slow 24-day drying under a solar greenhouse. This meticulous work heightens aromatic clarity and reveals a lively cup of great purity, perfectly balanced. On the palate it offers a tasting experience full of finesse: a delicate floral bouquet of violet and jasmine that intertwines harmoniously with the lovely vibrancy of orange and the indulgence of blackberry.
