With this Zero Fermentation Washed, Alo sets out to remove a step that has become almost unavoidable in modern washed coffees: fermentation. Ripe cherries are sorted, depulped and then washed immediately, without any time in tanks.The goal, simple in appearance but very demanding in practice, is to prevent fermentation from shaping the aromatic profile and to let the variety and the terroir express themselves with as little interference as possible.The cup opens on an airy texture, with a first note of white tea unfolding on the palate. Then comes cherry, fresh and tangy, almost jammy. As the tasting goes on the acidity gains in precision and evokes a lemon candy. A transparent, delicate and precise coffee. Roasted for filter.
