Altieri Coffee sits high in the misty hills of Boquete, Panama, at 1,800 to 1,900 metres. The farm is a family story. Gene Altieri, a New Yorker, bought the land around 2005, and his neighbour at the famous Hacienda La Esmeralda sold him his first Geisha trees. Years later, the family turned their old ice factory into the coffee mill. Today Francisco Altieri and his sister Anna Lynn run the farm, and every Geisha plot is named after one of the grandchildren, picked by drawing names from a cap. The estate is one of Panama's award winners, taking 1st place for Varietals at Best of Panama 2026. Fresh cherry is sealed into bags and submerged in a pool fed by the estate's own upstream river water for about five days. The water is kept continuously flowing and cold, because stopping the flow would let the ferment heat it. They trialled three to ten days and settled on five.LUCI, grown on the farm's highest plot, came in very sweet with good production in a hard year. Chombi, about 1,800 m.a.s.l. on deep soil under roughly 60 percent shade, is the near-twin of Dilgo, which sits at the same altitude on rockier ground. MAME brew guide: 10g dose, 1:15, medium-fine, 93°C — steep the first pour of 50g for 30 seconds, then centre pour 100g after.
