From Hacienda La Papaya, a partner of ours for several years now, this coffee brings out the full potential of Typica Mejorado, an emblematic Ecuadorian variety known for its elegance and aromatic complexity. Grown with remarkable precision by Juan Peña, this lot goes through a 120-hour anaerobic fermentation, a process that develops intense sweetness while preserving the finesse of the terroir.In the cup the balance is remarkable. From the first sips black cherry brings an enveloping sweetness, quickly joined by melting milk chocolate notes that round the whole thing out. Finally a touch of red grape, delicately fruity, extends the tasting with finesse.
