Produced by Juan José Huillca, an agricultural technician and dedicated farmer from Cusco, Peru, this coffee comes from Finca Cedruyoc, a 2.5-hectare farm situated in the Calca subregion at 1,850 meters above sea level. The farm benefits from steep, rocky terrain that reduces susceptibility to disease and drought, contributing to the coffee’s high quality and complexity.

This Bourbon varietal lot is processed using a fully washed method with a distinctive double fermentation. The cherries undergo an initial 48 hours of fermentation while still in the cherry, followed by pulping and an additional 36 hours of fermentation in tanks. This 84-hour total fermentation period enhances the coffee’s sweetness and complexity.

After washing, the parchment is dried on covered wooden raised beds for approximately 18 days, with regular raking to ensure even drying. Juan José employs scientific methods and sustainable practices, including the use of bioles—nutrient-rich organic fertilizers produced through anaerobic fermentation—to maintain soil health and support sustainable farming.

This coffee is roasted lightly for filter brewing, highlighting flavour notes of papaya, red apple, and tropical fruits. It represents the high-quality specialty coffees emerging from the Cusco region, supported by the Valle Inca cooperative network, which helps improve farmers' livelihoods through fair pricing and sustainable practices.
