Datura - Guji Shakisso Hadeso Fully Washed

Hadeso is located in the Shakisso woreda, an administrative district in the Guji Zone of southern Ethiopia, near the village of Hadeso from which it takes its name. The coffee comes mainly from farms around Dambi Uddo, where coffee is grown at elevations reaching 2,100 metres above sea level; around 500 smallholder farmers deliver freshly picked cherries to Hadeso, a station established in 2017 by Testi Coffee, one of twenty washing stations the family-owned company manages across Ethiopia.Cherry is selectively hand-harvested and pulped within 6 to 8 hours of arrival to prevent further natural fermentation, then fermented in tanks for 36 to 48 hours with water frequently replaced, washed and graded until the mucilage is fully removed, and dried on raised beds under parabolic shade net for 5 to 7 days until reaching 11 to 12% moisture.
