El Jaragual Rosado — A.M.O.C.'s first selection from this young Amalfi, Antioquia farm. Grown at 1500 MASL, run by Jonny and his brother since 2019, combining coffee with forestry and plantain shade systems.Manually harvested at optimal ripeness and processed in anaerobic bioreactors with selected microorganisms, extended fermentation, yeast inoculation, hot water washes, and cold water crashes.Expressive and clean, without boozy or funky notes — bubblegum, silky texture, and milk chocolate.
