Grown at 1700 MASL in Huila, on a family farm cultivating exotic varieties like Gesha, Bourbon Sidra, and Chiroso.Oxidized 72 hours, dried, re-hydrated with hot water, then fermented 120 hours with specific yeast below 25°C before a final 96-hour dry.Pineapple and chocolate mousse, from a natural process that's actually rehydrated and yeast-inoculated.
