Another exceptional lot from Franz and the Lost Origin team — this time from Lerida, processed with meticulous precision. Grown at Lerida by producer Maria Antonella Amoruso, cherries are transported to the Lost Origin lab in Panama City for depulped processing, fermented without microbial starters in custom stainless steel tanks.Fermentation runs for 4.6 days at 12.2°C before moving to temperature and humidity-regulated drying rooms for 14.6 days.Melon sweetness opens gently, cream soda floats through the middle, and green tea delivers a clean, delicate finish.
