From Lost Origin and their Santamaria lot in Boquete — a producer Special Guests has worked with since day one. Grown at Santamaria in Boquete, Panama, cherries are transported to the Lost Origin lab in Panama City for precision processing, guided by two proprietary cultures (LOY-007 and LOY-012) in custom stainless steel tanks.Fermentation lasted 7 days under controlled conditions at an average of 8.63°C, followed by 46.5 days of drying in temperature and humidity-regulated rooms.Lime and mango open the cup with vivid precision, strawberry sweetness following through to a bright, refined finish.
