The cherries, harvested at full ripeness, undergo a double fermentation: a first 24-hour anaerobic phase as whole cherries at room temperature, followed, after depulping, by a 24-hour aerobic phase in an open tank to work the mucilage. Fully washed, the beans then benefit from a slow 24-day drying under a solar greenhouse.
